Jérôme Roy, chef at the Michelin-starred restaurant L’Opidom
Jérôme Roy grew up on a family-run farm which was committed to sustainable agriculture. Watching his parents work, he understood the importance of proper farming: making the most of the earth’s gifts every season and minimising waste. Driven by a desire to work with the very finest ingredients, this perfectionist chose to learn his craft at some of the very best restaurants. After remarkable stints working alongside Thierry Marx, the Troisgros family and Pierre Gagnaire, who taught him that anything is possible, Jérôme Roy chose to work at Le Couvent des Minimes; while working there, he was given the Great Chef of Tomorrow trophy by Gault&Millau in 2016 and he was awarded his first Michelin star the same year. In 2019, Valérie and Jérôme Roy took the plunge and decided to open their own gourmet restaurant, L’Opidom.
L’Opidom’s team
Valérie grew up in the Vendée region, close to the beaches of the Atlantic. While studying accountancy, she met Jérôme Roy in a small seaside restaurant. From that moment on, their destinies became intertwined. Valérie learned about working in a restaurant’s dining room, on reception and as a secretary as part of the team working for the chef Thierry Marx, before working with the Troisgros family. She and her husband then began working at Le Couvent des Minimes & Spa in Provence, an incredible property which served as a blank slate. Jérôme was quickly awarded a Michelin star for his work.
It was then that the couple decided to open L’Opidom, seeing this restaurant as a limitless opportunity to express their creativity and share their values. Valérie is fundamental to the restaurant’s success, ensuring that every diner feels at home. Gently inquisitive about diners’ preferences, she is keen to find out about any allergies or intolerances and discreetly shares all the necessary information about ingredients.
